Easy Noodle Casserole is a staple in my arsenal of recipes for casseroles. It is one of my favorites because not only is it crazy easy, but it is so good. Husbands and kids love it as well as just about anyone that tries it.
If you have unexpected guests show up and you don’t know what to fix, try this dish; it’s sure to please.
Easy Noodle Casserole
- 1 ½ pounds ground beef
- 1 cup chopped onion
- 1 15.25- oz can whole kernel corn ½ of liquid drained
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 cup sour cream
- 1 2- oz jar chopped pimentos
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 cups wide noodles cooked
- 4-6 slices buttered bread cut into cubes
Preheat oven to 350° F. Lightly coat a 13” casserole dish with cooking spray.
Brown ground beef and onions, drain grease and set aside.
In a large mixing bowl, add corn and liquid, soups, sour cream and pimentos and stir until well mixed. Add cooked noodles, salt and pepper, and mix until covered.
Pour noodle mixture into a prepared casserole dish and top with bread cubes, butter side up.
Bake for 30 minutes or until bread cubes are golden brown. Let sit for 5 minutes before serving.
Tip: When casserole recipes call for cooked pasta, only parboil the noodles. Undercooking pasta prevents it from becoming mushy after baking. Most pasta instructions call for cooking 7 minutes. I shorten my pasta cooking time by 2-3 minutes or until my pasta is al dente.
